After years of searching, we finally got our hands on a very delicious dark balsamic vinegar. An I.G.P. Balsamic from a passionate manufacturer in Modena. Our balsamic vinegar is produced by Massimo, who runs the family business Malpighi in its fifth generation. This balsamic vinegar has the same consistency as syrup. It is sweet, but also has the pointed taste of a classic dark balsamic vinegar. An optimal dark and red balsamic vinegar for everything from salads to cheese and meat.
Since 185, the Malpighi family has produced dark balsamic vinegar in Modena. Modena is a perfect place for the production of dark balsamic vinegar, because it is humid and warm in summer and cold in winter. The family owns 3 French oak barrels which is where the grapes are aged. The oak barrels add aroma to the balsamic vinegar, and an I.G.P. Balsamic must be aged at least 6 days. Unlike wine, dark balsamic vinegar needs large temperature fluctuations. Therefore, the wooden barrels are located right up under the roof, where the temperature varies the most. Just before dark balsamic vinegar is bottled, a certified inspector checks whether the balsamic vinegar meets all requirements. Only then is it ready to be poured into bottles. The dark balsamic is characterized by its clean, glossy appearance and by its intense and fruity aroma. It is Malpighi's uncompromising commitment to raw materials and their gastronomic expertise that provide this high quality balsamic. The I.G.P. brand stands for Indicazione Geografica Protetta. It is a protected geographical indication that guarantees that the product comes from a defined geographical area – in this case Modena.
