Olive oil is our heart and soul. It is where it all started. For years, we watched the tops of the hundreds of beautiful trees in the olive groves that stretched across the Tuscan slopes in front of our house.
We are extremely passionate about these golden green drops – which is why it is a great pleasure for us that this year's organic extra virgin olive oil has broken ALL records compared to previous years. Records that we were already very proud of. Twice as many antioxidants.
The oil has been analyzed in an official laboratory, where they found, among other things, that the content of antioxidants is twice as high as previous years.
Tasting panel: Flawless and top marks.
In addition to the laboratory analysis, we have sent the oil for blind tasting at an official taste panel. From the taste panel it got top marks and a flawless rating.We are immensely proud since this year's harvest without a doubt yielded the best extra virgin olive oil we have ever made and among the world's best olive oils. This is the result of many years of targeted collaboration with our olive oil specialist.
Harvest: At the olive harvest, everyone helps pick the olives fresh from the trees and place them into boxes so they are ready to go to the olive mill. A few hours later, the mill yields the finished result: organic cold-pressed extra virgin olive oil of the highest quality.
The oil is made from the varieties in Frantoio, Moraiolo and Leccino. All olives are harvested by hand and pressed on the same day they are picked. The properties of oil are considered by many to be among the best in the world. For a bottle of a half liter of our virgin olive oil, up to about 5 kilograms of olives are used. This is close to what a tree gives on average. Our oil is produced without the use of additives or chemicals, to ensure that you get the world's purest olive oil. This is pure love and good old-fashioned elbow grease. A traditional virgin olive oil may contain max .8 % free fatty acids. Our virgin olive oil contains only .1%. The less acidity, the better the oil you get.
Storage: Virgin olive oil should generally be stored in dark and cellar cold temps to maintain its good quality. But without these ideal circumstances, it retains its fine properties for at least a year.
